Lightened Up Spring Spinach Salad with a Basil Vinaigrette

Ingredients:

Salad:

  • 2 cups spinach

  • 1/2 carrot, spiralized or peeled into long ribbons

  • 2 tbsp goat or feta cheese

  • 1 tbsp pumpkin seeds

Dressing:

  • 1 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tsp dijon mustard

  • 2 drops doTERRA Lemon Essential Oil

  • 1 drop doTERRA Basil Essential Oil

Directions:

  1. In a small bowl, combine the salad ingredients and set aside.

  2. Add the dressing ingredients to a small mason jar and shake well.

  3. Dish and dress up the salad - enjoy!
