Lemon Berry Bomb Muffins


  • 2 cups almond meal (283g)

  • 1/4 cup coconut flour (30g)

  • 1/2 tsp baking soda

  • 2 eggs

  • 1/3 cup honey (100g)

  • 1/4 cup melted coconut oil

  • ¼ cup almond milk

  • 1 tsp vanilla extract

  • 6 drops doTERRA Lemon Essential Oil

  • ½  cup blueberries

  • ½ cup frozen raspberries


  1. Preheat oven to 350 F and line a muffin tray with muffin liners.

  2. Combine dry ingredients (almond meal, coconut flour, and baking soda) in a mixing bowl.

  3. Add wet ingredients (eggs, honey, coconut oil, almond milk, vanilla extract, lemon essential oil) to the bowl. Stir well but don’t over mix.

  4. Gently fold in the berries ensuring they are evenly distributed throughout the batter.

  5. Fill each muffin cup with batter. Bake in the oven for approximately 25 minutes or until a toothpick inserted in the centre comes out clean. Enjoy!
