Gimme' The Glow Butternut Squash Soup

 

Soups are kind of a staple in my household. My mom is a huge fan of any soup that contains even the slightest hint of coconut milk. So mom, this one is for you! As well as anyone else who loves a creamy bowl of buttery nutty squash of goodness.

Get out your peelers, chop your life away and then cozy up by the fire with a bowl of this warming yellow goodness :)

 

GIMMEโ€™ THE GLOW BUTTERNUT SQUASH SOUP

INGREDIENTS

  • 1 tbsp coconut oil

  • 1 Yellow onion, chopped

  • 2 cloves garlic, finely minced

  • 1 Large Butternut Squash, peeled and chopped (1400g)

  • 3 Cups Chicken or Vegetable Broth

  • 1 Can Farmboy Lite Coconut Milk

  • 1 tsp sea salt

DIRECTIONS

  1. In a large pot over medium heat, add the coconut oil, onion and garlic. Saute for 3-4 minutes until the onions begin to sweat and become a clear colour.

  2. Add the squash and saute for an additional 7-8 minutes.

  3. Add the broth and simmer on low heat for 20 minutes or until the squash softens.

  4. Transfer the mixture to a high speed blender and add the coconut milk ad sea salt. Blend until smooth and then transfer to jars to store.
