Best Ever One Bowl Paleo Banana Bread

Holy. Moly. MOIST!

My friends tell me not to say that word as it makes them cringe…. moist, moist, moist. Ha! Jenna, I love you! But it truly is the best word to use to describe how freaking DELICIOUS this recipe is. I kid you not, it tasted better on the fourth day then the first. And if I added chocolate chips to the mix? Ugh. Excuse my foodgasm.

Okay, I’m back. Just wait, you’ll experience the same feeling. Your eyes will roll back and you’ll stop breathing for a second because it takes so damn good you can’t believe that something this delicious could be good for you.

If we were to go back a few years, I wouldn’t be caught dead eating a banana. I hated the texture and would have rather ate a cup of olives instead of a room temperature, mushy banana. Nowadays, they are a staple in my smoothie and a great sweetener for loaves, muffins and even energy bites.

It might be because my tastebuds changed, but believe that attending nutrition school played a serious part of converting me to team banana.

Move over Wonder Bread. There’s a new competitor in town. I’ve been loving the banana bread with a bit of coconut oil or almond butter spread on top this past and already picked up the ingredients to make it again this weekend. Best Ever One Bowl Paleo Banana Bread

Serves: 12



  • 3 ripe bananas (333g), mashed

  • 5 eggs

  • 1/2 cup (128g) almond butter (or nut/seed butter of your choice)

  • 5 tbsp (70g) coconut oil, melted

  • 1/2 cup (56g) coconut flour

  • 1 tsp cinnamon

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • pinch of sea salt



  1. Preheat the oven to 350 degrees and grease a 9 X 5 loaf pan with coconut oil and set aside.

  2. In a large bowl, combine the mashed banana, eggs, coconut oil and almond butter, stirring until the mixture is evenly combine.

  3. Slowly add the remaining ingredients making sure to break down any coconut flour clumps that form.

  4. Pour the batter into the prepared pan and bake for 45 - 50 minutes, or until a toothpick comes out clean when inserted.

  5. Remove from the oven and allow the loaf to cool on a wire rack for a 1/2 hour and then slice and enjoy!
