Raw Carrot Cake Spice Balls

Raw Carrot Cake Spice Balls

Makes: 21 balls

Ingredients:

  • 3 medium carrots, peeled and shredded

  • 1 cup dates (150g)

  • 1 cup oats (90g)

  • 1 cup walnuts (100g)

  • 1 tbsp almond butter (16g)

  • ½ tsp cloves

  • ¼ tsp nutmeg

  • 2 drops doTERRA Cinnamon Essential Oil

  • 1 drop doTERRA Ginger Essential Oil

  • 1 tsp raw honey

  • ¼ cup shredded coconut

  • ½ tsp sea salt

Directions:

  1. Add the carrots to the bowl of a food processor and process until finely ground. Transfer to a plate or bowl.

  2. Add the dates, walnuts and oats to the food processor and mix until evenly combined. Return the carrots to the food processor and add in the remaining ingredients.

  3. Process until a dough forms and roll the mixture into balls.  Store in an airtight container in the fridge for up to one week.
