1. Heat a cast iron pan over medium heat. 2. Slice the sausages into coins and cook for 3-4 minutes per side. Remove from pan and set aside. 3. Add the onion and pepper to the pan and sauce for 3 minutes, or until soft. Add the egg whites and eggs. Cook for another 7-8 minutes over medium heat until the egg whites are cooked and the yolk is to your liking (soft, medium or hard). 4. Reduce the heat to low and add the cheese. Cover for 3 minutes or until the cheese is melted. 5. Top with sausage, avocado, cherry tomatoes, cilantro, sea salt and pepper. 6. Serve & enjoy!
