Key Lime Pie Smoothie

The lyrics, “you put the lime in the coconut and shake it all up…” are playing in a loop in my head as I write this. But could it be any more fitting?

Call me crazy, but I don’t actually like key lime pie. Or maybe I just haven’t had a good slice, who knows? Needless to say that I am working on liking pie (it’s a hard job 😉 and am starting with this smoothie. It’s definitely not the same as a creamy sweet piece of key lime pie that you’re used to having, but my tastebuds would argue that it’s better. Oh, I went there 😉 It’s better for you to say the least!

I love using citrus fruits and essential oils in my smoothies to bring out the sweetness of the drink but to also flavour it without adding a ton of fruit or sugar. The banana gives it a touch of sweetness while the lime juice adds a bit of sourness to the smoothie to make it a bit tart.

Mhmmm. So do as I do – whip it up and pretend like you are laying on the beach in sunny California with a refreshing coconut key lime pie smoothie in your hand when really we’re all sitting at our kitchen counters watching it rain here in Canada. Am I right?

Fake it till you make it they say, or in this case fake it till you like it. Which you will 😉
