Oatmeal Chocolate Chip Cookie Dough Bites

Calling all peanut butter chocolate lovers! I’ve got a good one for you today 😀

I have a confession to make -I’ve been super selfish lately…. I’ve been keeping this recipe a secret for over two months and that my friend, just isn’t right.

When it comes to snacking, I’m your girl. I’m never in one place for more than a few hours and practically live on smoothies, energy balls, veggies and protein bars – anyone struggle with crazy schedules? 


I believe that everyone has a special talent, whether it’s designing armchairs, picking the perfect watermelon or being able to sense when there’s a thunderstorm coming. Throwing things into a blender or a food processor and creating something delicious has been mine for the last few years.

Thankfully only a few recipes have flopped out of the many that I’ve tested, let’s not talk about the gazpacho for while okay? Who needs it anyway? It’s practically salsa anyways….

I was craving something peanut buttery and chocolatey last week (monthly cravings, am I right ladies?) and whipped these guys up in about five minutes flat. Craving smashed and Lindsay was happy – which is always a good thing 😉

So here you have it. The recipe I’ve been keeping closer to my heart than my green smoothies lately, which says a lot.

Oatmeal Chocolate Chip Cookie Dough Bites

Makes 24

Ingredients:

  • 1 cup peanut butter

  • 6 tablespoons maple syrup

  • 1 cup blanched almond flour

  • 1 cup gluten-free oats

  • ½  teaspoon kosher salt

  • 1 teaspoon vanilla extract

  • 6 tablespoons chocolate chips

 

Instructions

  1. In a large bowl, mix together the peanut butter, maple syrup, almond flour, gluten-free oats, sea salt, vanilla and chocolate chips.

  2. Roll into 1 inch sized balls and store in the fridge.
