2 Bite Gluten Free Vegan Banana Muffins

INGREDIENTS

  • 1.5 large bananas (270 grams)

  • 1/2 cup almond flour (75g)

  • 2 tbsp coconut flour 15g)

  • 1.5 tbsp coconut oil, melted (21g)

  • 1 tsp baking powder

  • 1/2 tsp sea salt

  • 1/4 cup chocolate chips

DIRECTIONS

  1. Preheat the oven to 350 degrees Fahrenheit and line mini muffin trays with liners

  2. In a large bowl, mash the bananas until theyโ€™re almost smooth (leave some chunks!)

  3. Add the remaining ingredients and mixing thoroughly

  4. Portion into muffin cups and bake for 12-15 minutes or until a toothpick comes out clean
